I absolutely LOVE fresh squeezed lemonade! I don’t particularly enjoy carbonation, so I typically drink water. However, when I want something different I go for some type of lemonade. Since summer is coming to a close, I thought it would only be fitting to combine….
…juicy diced watermelon ice cubes & homemade raspberry lemonade!
Watermelon ice cubes can be made two different ways: cubed watermelon frozen on cookie sheets or (my favorite) diced watermelon placed in ice cube trays or mini muffin tins and fill with raspberry lemonade. Making homemade raspberry lemonade is super easy. Make your sugar water. Puree raspberries. Juice lemons. Combine and your good to go!
I hope you enjoy this as much as our family does!
- 1 cup water
- ½ cup granulated sugar
- 1 ¼ cups fresh lemon juice (about 6 lemons)
- 2 cups raspberries, pureed
- 3½ cups cold water
- Watermelon Ice cubes
- 2 cups diced watermelon
- ½ cup raspberry lemonade
- In a small sauce pan, bring sugar and water to simmer. Stir until sugar dissolves. Remove from the heat and let cool to room temperature. Place raspberries in a food processor and process until smooth. Pour pureed raspberries in the sugar water and stir well. Add the lemon juice. Combine the raspberry mixture and the cold water in a large pitcher. Stir well.
- To prepare Watermelon Ice Cubes: place diced watermelon pieces (2-3) in ice cube trays or small muffin tins. Use ½ cup of prepared Raspberry Lemonade and fill ice cube tray/mini muffin tin with watermelon pieces. Freeze until solid. Remove from tray and serve with Raspberry Lemonade
